Tuna Torta Patty
Tuna torta patty is a protein-packed Filipino-style breakfast patty made with eggplant, tuna, eggs, and simple pantry ingredients.

- 4 to 5 eggplants sliced lengthwise
- 1 onion sliced
- 2 cans tuna
- Salt to taste
- Pepper to taste
- Magic Sarap to taste
- 2 eggs or 3 egg whites
- 1/4 cup flour
- Oil for frying
Fry the eggplant until softened and lightly browned. Set aside.
Fry the sliced onions until softened and fragrant.
Add the tuna to the pan and cook briefly with the onions.
Season with salt, pepper, and Magic Sarap.
Transfer the eggplant, onion, and tuna mixture to a food processor.
Add the eggs or egg whites and the flour.
Pulse just until combined. Do not blend until smooth. Leave some texture in the mixture.
Heat a little oil in a pan.
Scoop and shape the mixture into patties.
Pan-fry for about 1 to 2 minutes per side, or until browned and cooked through.
Serve hot with rice and banana ketchup, or with gravy for a different twist.
