- 3 to 4 small red onions or shallots finely chopped
- 3 cloves garlic minced

- 1 teaspoon sugar
- 1 pinch MSG
- 1 pinch salt
- 1 pinch black pepper
- juice of 1 lemon or lime
- 2 tablespoons cilantro chopped
Combine chopped shallots, garlic, and chilies in a small pan.
Add fish sauce, sugar, MSG, salt, and black pepper.
Add lemon or lime juice.
Heat gently for about 2 minutes to bloom the aromatics.
Remove from heat and let cool.
Stir in chopped cilantro.
